Easy to make - Pita toast

Shopping list:

1. Pita bread
2. Onion
3. Tomato
4. Potato
5. Green Chili
6. Black pepper powder
7. Nuts, Raisins, Dates
8. Salt


Method:

Pile the mixture of sliced onion, potato, tomato and green chill on top of the pita bread. Add some salt. Bake for 4 minutes on high power level. You will get a crispy Pita toast. Decorate with nuts/raisins/dates and black pepper powder.


Mushroom Again....

Mushroom again.. this time it is oyster mushroom.



Can you feel the taste.. if you can't, then you are missing something.

Simple Vegetable Curry

You will need:

Carrot - sliced
Mushroom
Green peas
Onion - finely sliced
Corn - optional
Coriander powder
Turmeric powder
Coconut paste
Sunflower oil
Coriander leaves - finely cut
Salt - to taste

Heat up water in a pan, add mixed vegetables. When it is half cooked add other stuffs (coriander powder, turmeric powder, coriander leaves, oil, and coconut paste, salt). Mix well. Actually you can add powders of your choice. Since I had the above two I used that, same with oil. 10 - 15 minutes of cooking will do. I was able to make it easily since I bought cut vegetables in packet and a small pack of coconut paste. Here are the pictures before heating up and after.

Spinach & Cuccumber Olan

An easy to make dish:

1. Spinach - 1 small bundle
2. Cucumber - 1/2
3. Sunflower Oil - 2 tsp
4. Broccoli
5. Salt

Cut cucumber in to thin slices and Spinach in to small pieces. Heat oil in a pan, put some broccoli. Add cucumber and spinach, pour enough of water. Wait (approx 5-10 mins) till it is cooked well. Add salt as well. This goes well with kanji and rice.

Fruit salad with Ice cream and nuts

Now onwards I will post the recopies which is cooked by me. Let me know how it is.

Ingredients

1. Mango sliced - 1/2 cup
2. Banana sliced - 1/2 cup
3. Apple sliced - 1/2 cup
4. Pineapple sliced - 1/2 cup
5. Cashew nuts
6. Cherry
7. Ice-cream - 1 cup
8. Milk - 1/2 cup
9. Sugar - 1 spoon

- Grind Mango with milk and sugar for just few seconds.
- Add all other ingredients except the ice cream and mix well
- Take little ice cream in a glass and add the mix on top of it.
- Again add ice cream on top of the mix.

Kumbalanga leaf Chutni

Green colored chutni, too tasty one. Though I hardly had it in my life, this one is one of my favorite. I get this only when I go to my home. I don’t know if we can get the ashgourd leaf in Bangalore.

Ingredients

1. Ash gourd leaf - 10 no
2. Green chilli - 3
3. curd - 1/2 cup
4. Oil - 2 spoon
5. Mustard seeds - 1 spoon
6. Coconut- 1 cup
7. Salt - to taste

- Cook the ashgourd leafs and green chilli with enough water
- Grind cocount with cooked ashgourd leaves
- Properly mix curd with the grinded mix
- Take Oil in another pan and Splutter mustard seeds when oil is hot.
- Add this to Chutni

Curd rice

Ingredients

6 cups of cooked white rice1 tsp mustard seeds

3 cups of plain yoghurt

1 sprig curry leaves

2 green chillies, chopped finely

2 tsp coriander leaves, chopped finely

1 small piece of ginger chopped finely

1 dry red chilli, cut into piecesA pinch of hing(asoefetida)

Salt to taste

1 tablespoon cooking oil
Method

Mix the ginger, coriander leaves, green chilliesand salt into the yogurt.

Mix well.

Add this to the rice and mix well.

Season with mustard, curry leaves, red chillies andhing.

Eat with any hot pickle.


Pachadi

1. Curd - 1/2 cup

2. Kumbalanga (Ash Gourd)

3. Mustard seeds - 2 Spoon

4. Coconut- 1 cup

5. Green Chillies - 3

6. Coconut Oil - 1 Spoon

7. Salt - To taste

- Peel the skin of Ash Gourd and slice it into small pieces.
- Cook Ash Gourd with enough water, green chillies and salt.
- Grind Cocount, curd, 1 Spoon of Mustard Seeds
- Add these grind ingredients, into cooked Ash Gourd.
- Add salt and cook for some time
- Take Oil in another pan and Splutter mustard seeds when oil is hot.
- Add this to Pachadi.


---- above is a version of what I cooked today, if you are using the cucumber instead of Ash Gourd it will become more easy, because you dont have to cook at all. Just mixing all will do.

---- If you eat Bittergourd, then it can be used instead of Ashgourd. Ofcourse you will need to cook Bittergourd.
